When I made the 5-Ingredient Crockpot Buffalo Chicken Dip, my entire family raved about the smell and the taste. The first time I made this meal, our now 6 year old came into the kitchen and said “I want that!” I was in the middle of a freezer prep session, so I teased him that he couldn’t eat it right that second because it wasn’t cooked. Often, my kids forget about these simple encounters that happen throughout the day. Not this time! For Christmas this past year, my brother and sister-in-law put a can of chipotle peppers in my stocking. Although, I had eaten plenty of dishes spiced with chipotle, I had never really cooked with them. I decided to start with a mole sauce. After all, how could my kids refuse to eat a dish that is made with peanut butter and chocolate (cocoa powder)?
When Kelly and I were writing the Crockpot Chicken Freezer Meals eCookbook we asked the New Leaf Wellness Facebook followers which recipe they would like to preview. The Crockpot Chicken Tikka Masala was voted hands down. It’s sweet, it’s spicy, it’s delicious AND we labored over this recipe until it was absolutely perfect.
