12 Healthy Crockpot Freezer Meals to Make in February

Are you looking for new recipes to try this month? I’ve got you covered. I came up with a list of 12 crockpot recipes that are super easy to throw together in the morning. If you’re motivated, you can even prep and freeze all of them this weekend (free shopping list below!).

What’s so great about these recipes?

  • They’re healthy. (Most of them include seasonal veggies like cauliflower, citrus fruits, leafy greens, pears, or sweet potatoes.)
  • They can be frozen without any cooking ahead of time. That means they’re very quick and easy to prep and cook for the first time in the crockpot. (No “leftover” taste.)
  • They’re delicious! (I tried all of them myself.)

Our life feels very full right now and dinner is the last thing on my mind. I’m juggling five kids (including a newborn), school, work, Tae Kwon Do classes (for my eight year old), and trying to stay sane.  Waiting until 5pm to make dinner is stressful and I hate last-minute trips to the grocery store.

It took some planning ahead of time, but I came up with 12 different crockpot recipes that we could eat this month. These are all recipes that we’ve made before, so I know that they’re healthy and delicious.

12 Healthy Crockpot Freezer Meals to Make in February

  1. Lemon Pepper Chicken
  2. Chicken Noodle Soup
  3. Italian Pork Roast (yum!)
  4. Balsamic Bacon Chicken and Veggies
  5. Minestrone Soup (I make mine with meatballs)
  6. Shredded Pork with Balsamic Pears
  7. Shredded Chicken Quesadillas
  8. Kale and Chorizo Soup
  9. Stuffed Peppers (delicious with ground turkey or beef)
  10. Chicken Curry (you can substitute fresh or frozen cauliflower for the peas)
  11. White Chicken Chili
  12. Beef Roast with Carrots (only 5 ingredients!)

Bonus Recipe: Easy Stovetop Gnocchi and Swiss Chard (one of my favorite stovetop recipes that can be frozen without any cooking ahead of time)

A Year's Worth of Crockpot Freezer Meal Plans...for Free!

If you look at the calendar above, you’ll see that I picked a “theme” for each day of the week and then found seasonal crockpot recipes that would match that theme.  (For example, Beef Roast with Carrots and Rice on a BEEF/PORK-themed Monday.) I also included a variety of tastes and textures so we wouldn’t feel like we were eating the same thing everyday.

My husband, Andy, added text boxes to the calendar, so you can swap the meals to fit your schedule, delete the meals you don’t want to make, etc. I hope you have a wonderful February, Friends.

    Hello Kelly!
    On February 22, 2018, I bought your complete freezer crockpot bundle, so worth the $29.97! On February 24, I went shopping. On the same day, I made 20 meals (with the help of my husband, 16 and 14-year-old daughters.) Our 18-year-old son did not want to participate. It took about four hours with clean-up. I printed most of the ebook and placed into a 3-ring binder and a calendar denoting which meal and when.

    We started our first meal on February 25 (I cooked it without freezing it first). Since then we have had a dinner every night, preplanned, no stress, and the food is delicious! My husband is a swing shift worker, I am a college professor and on Monday and Wednesday’s I have a late day and do not want to come home to cook. Also, like others, I never know what to make, and I waste food, mostly because I forget what is in the fridge. The typical response I get when I ask, “What do you want for dinner?” “I don’t know.”

    Just like the free 12 meals here, you did this around April of last year, and I tried it. It was great then too. Then I had the summer off and free time. This semester trying to do everything done was not working, so I appreciate that you and your family are sharing with others how easy this can be AND Affordable. I was curious about the cost of the meals… So I kept track.

    Between Aldi and Tops, I spent $194.02, divided by 20 meals, and then divided by five (people). The cost came to $9.70 a meal and $1.94 per person per meal. I have all the spices, most veggies on hand so I really only bought the canned goods and the meat. The portion sizes are accurate. With the ages of my family, we are eating as five adults. We have had some leftovers with the recipes thus far; this becomes lunch the next day. This has cut way down on leftovers before I was making too much food and then no one ate the leftovers. Total waste of money.

    One other reason I like making my own meals is that I am Gluten Free and Dairy Free. Your recipes give complete control over what I eat and there is a variety of recipes.

    Some of our favorites:
    1) Spicy Maple Ribs (husband loved this)
    2) Cabbage Rolls with Rice (kids loved this)
    3) Beef and Cabbage Soup (14-year old loved it!)
    4) Maple Pork Roast with Cin Apple Sauce (my favorite)
    5) Thai Sweet and Spicy Beef with Rice (Loved the texture of the sauce with the rice)
    6) Chicken and Artichoke Marina with GF pasta

    I am looking forward to the more delicious meals! I loved prepping the foods with fruits. A delicious way to sweeten the food, naturally.

    One more thing. Having the meals set up and preplanned, I like coming home. If the kids are hungry when they get home, they eat. They are not waiting to see what I am making for dinner…

    First Im so excited about the shopping list and trying something new , now for my question , I used to cook for a large family (5 kids ) now all grown and the crock pot i have is large and didn’t realize there were different sizes LOL so what is your suggestion for crocking for two ? im cutting recipes in half and realize my pot was so big my food was over cooking
