Do you want to use your crockpot this summer to make something other than soup and pot roast?  Here’s a list of my favorite summer crockpot recipes with fresh ingredients!  I even added them to a June calendar so you’ll know when to cook and eat each one.  If you’re extra motivated, you can even prep and freeze all of them this weekend (free shopping list below).

What’s so great about these recipes?

  • They’re healthy. (Most include veggies that are in season right now, like green beans, leafy greens, and peas.)
  • They’re delicious! (I tried all of them myself.)
  • They can be frozen without any cooking ahead of time. When you’re ready to eat, thaw in your refrigerator or in the morning in water and then cook in your crockpot like normal. (They can be frozen for at least three months, so if you don’t eat all of them this month you’ll have healthy meals on-hand for the entire summer.)

This meal plan includes 12 healthy crockpot freezer recipes:

  1. Beef, Lime, and Cilantro Chili
  2. Honey Sriracha Shredded Chicken (only 5 ingredients!)
  3. Ginger Chicken with Snow Peas
  4. Sweet and Sour BBQ Meatballs
  5. Asian Chicken Lettuce Wraps (also great made with ground turkey)

12 Healthy Crockpot Freezer Meals to Make in JuneWant to know when to eat them?  I went one step further and plugged the recipes into a calendar so you’ll know exactly when to cook each one.  I hate the work that goes into planning ahead like this, but I’m always glad I did in the long run.

Here’s my meal planning method: I start with a “theme” for each day of the week and then pick three crockpot recipes per week that are seasonal and include a variety of flavors and textures.  I thought it would be fun to pick recipes for Mondays that taste great leftover (perfect for lunches), Tuesdays with tacos/lettuce wraps (use soft tortillas for kids or picky eaters), and Thursdays with chicken.

My husband, Andy, added text boxes to the calendar, so you can swap the meals to fit your schedule, delete the meals you don’t want to make, fill out every single day, etc.  I hope this simplifies your summer, Friends!

Hi there, question about cooking these meals (which look amassing btw). In the cooking instructions it doesn’t say to add any water or broth to the crockpot. Do you just toss it in without any? Or should we add liquid? Thanks in advance!
