Are you looking for new recipes to try this month? I’ve got you covered. I came up with a list of 12 crockpot recipes that are super easy to throw together in the morning. If you’re motivated, you can even prep and freeze all of them this weekend (full grocery list below!).

  • They’re delicious! (I’ve tried all of them myself)

  1. Eggplant Rollatini
  2. Caribbean Jerk Chicken Tacos
  3. Beef Lime Cilantro Chili
  4. Garden Vegetable Soup with Pesto (Panera Copycat)
  5. Salsa Verde Chicken
  6. Cherry Pot Roast with Sweet Potatoes (inspired by the cherry pork loin that I made in this post)
  7. Greens & Beans
  8. Chicken Quesadillas
  9. Chinese Green Pepper Steak (also delicious cooked in a pan on the stovetop)
  10. Spaghetti Squash with Marinara Sauce (you can add meatballs if you want)
  11. Ginger-Peach Chicken with Green Beans
  12. Steak Fajitas

I also went one step further and plugged the recipes into a calendar so you’ll know exactly when to eat each one.

I started with a “theme” for each day of the week (meatless Monday, chicken, beef, etc), and then added the recipes in a way that helps us eat a variety of flavors and textures each week.

My husband, Andy, added text boxes to the calendar, so you can swap out meals that you don’t want to make or fill out the entire month. Yay!

  • I thank you so much for what you do. I am rather new to herbs, the health benefit of the food I eat and such. This is the first time I have tried one of your crockpot recipe. When I first saw the first one this month with eggplant I had decided this was not one of my favorite foods. Except as I began this new health food journey I am committed trying new foods or one I thought I didn’t like. What a pleasant surprise, this was extremely tasty. I don’t know why I thought I didn’t like eggplant but plan to try other foods I am not sure of. I will eat the leftovers tomorrow. When I researched the health benefits of eggplant I was thrilled. Thank you for the time spent sharing your Healthy Crockpot meals.

    Cream cheese is missing from the grocery list 😉

      It’s included under “not needed until day of cooking”. If I froze the meal for three months, I would wait to buy it until closer to the cooking time.

    Are these recipes also in your complete bundle book? I love the labels! We have tried the 30 meals in 3 hours and loved everyone so looking forward to trying more of your recipes

      The beef lime chili and salsa verde chicken are, but for the most part I try to keep my cookbook recipes off the internet. If you liked the 30 in 3 hours you’ll definitely like the bundle. I think my cookbooks have my very best recipes. 🙂
