When my 31 Crockpot Freezer Meals for Back-to-School when viral a lot of people asked me how to modify my recipes for two people.  Typically, my recipes have 4-6 servings, so my answer was to split each freezer meal in half and cook it in a smaller crockpot.

I decided to give this method a try myself and picked 10 of my favorite crockpot freezer meals to split into 20 freezer meals with 2-3 servings each.

Here’s what I made:

  1. Two freezer bags of Sloppy Joes (from my Crock’d Slow Cooker Freezer Meals eCookbook and shared for free below)
  2. Two freezer bags of Minestrone Soup
  3. Two freezer bags of Italian Wedding Soup
  4. Two freezer bags of Meatball Vegetable Soup
  5. Two freezer bags of Shredded Beef and Carrots (the beef can be used for sandwiches)
  6. Two freezer bags of Shredded BBQ Chicken (for sandwiches)
  7. Two freezer bags of Beef Chili
  8. Two freezer bags of Cranberry Pork Roast with green beans
  9. Two freezer bags of Beef and Barley Stew (recipe from Live Simply)
  10. Two freezer bags of Stuffed Peppers

I also typed the ingredients and cooking instructions onto printable freezer labels and saved them so I can use them again in the future.  Here are the files if you want to use them too:

  1. Freezer Labels for Recipes 1-4 (print two if you are splitting the recipes into two bags like I did)
  2. Freezer Labels for Recipes 5-8 (print two if you are spitting the recipes into two bags)
  3. Freezer Labels for Recipes 9 and 10

20 Crockpot Freezer Meals for Two People

I already tested out a couple of the meals in two new mini crockpots that I bought and they were delicious.  Both of the crockpots were highly rated on Amazon and they work perfectly with these smaller meals.

(If you’re placing an order on Amazon, I also highly recommend these baggy clips to hold your bags while you’re filling them.  I own 10 and they’re amazing!)

20 Crockpot Freezer Meals for Two People

It took me a little less than three hours to prep all 20 meals (including clean-up) and I spent $122 on ingredients.  That works out to only 9 minutes and $6 per meal.  I’m pretty sure there’s no cheaper and easier way to prepare healthy dinners.

One thing I learned from this freezer meal prep session was to stick with regular name-brand freezer bags. I thought that these smaller meals would work in the Ziplock vacuum bags, but the hand pump made a huge mess and several of the bags leaked.  What a disaster!

Have yo seen the new slow cookers that have a thermometer built in? you set the desired temperature and the appliance goes to warm when it reaches the right temperature.

I wonder how cooking in a 6 Quart crock would affect the cooking time for the smaller meals? If at all.

Makes a big difference. I’ve burned mine three out of the four times I’ve attempted the meals. 🙁
I’m seriously considering the small Cusinart one with the timer recommended above.

I have put a smaller Pyrex type bowl into the crock and have been happy with the results.

If cooking in the small 2.5 slow cooker, are the cooking times the same as if making it as one bigger meal? i am giving these to my parents and they are completely new to using a slow cooker so I want to make sure they have good directions 🙂 I am planning on making Honey Dijon Chicken, Grandma’s Beef Stew, and Italian Pot Roast which I will split into the two smaller meals.

Thanks!

I’m confused? afraid of overcooking? So am i to understand that if you split your (6 serving) meals in two and you use the 6qt slow cooker or 2.5-3.5qts slow cooker they are to be cooked for 8hrs? I’m reading something wrong. ???
I have a 6serving recipe and splitting it in two using a 4qt slow cooker…i would still cook one of the split meals for 8hrs?
please help…..

I was wondering do you use Ziploc Freezer bags or something else?

I’ve had great results with Meijer brand freezer bags as well. Love the 2.5 quart crockpot when cooking just for my empty nest. Think I paid $12 for it on sale around the holidays.

I have had wonderful results with my food saver, but be mindful. Freeze first! Then vacuum seal. You do not want liquid sucked into the machine.
I have one with the pulse vac button & rarely do I not freeze first.

Great tip, Karen. My husband vacuumed blueberries. We’ll freeze first next time!

What are those bags you’re using?? I find that the regular freezer Ziploc bags are not as sturdy as I’d like… especially when I forget to thaw overnight and use the water-in-the-sink method. Almost every time I’ve ended up with water ((GAG)) in my bag when I lift it out of the sink. :((

Maybe try placing the frozen food bag inside another larger plastic bag to keep seepage out (like a turkey bag, and just tie the top shut). The larger bag could be washed and reused if you do this often. 🙂
