Eleven Vegetarian Make-Ahead Crockpot Recipes

Since sharing my list of 31 crockpot freezer recipes, I’ve had a lot of requests for vegetarian crockpot recipes that freeze well.  So, here you go!  I’ve compiled a list of 11 vegetarian recipes that you can make ahead of time and freeze for your crockpot…

11 Vegetarian Make Ahead Crockpot Recipes

I’ll be honest and tell you that my family eats meat with dinner every night, except for when we have lasagna or the garden vegetable soup or bean and cheese burritos from my freezer cookbooks.  That doesn’t mean I don’t know a good vegetarian crockpot recipe when I see one, though.

I’ve made hundreds of make-ahead crockpot recipes, and I can tell you that these vegetarian recipes will freeze perfectly.  And, the best part is that you don’t have to do any cooking ahead of time – simply combine the ingredients and freeze!

Even though we eat meat, some of these recipes look so yummy that I’m convinced we need to give them a try.  Such as easy way to save money.  (And, a huge time-saver, if you prep a bunch of make-ahead crockpot meals at once.)

Eleven Vegetarian Make-Ahead Crockpot Recipes

  1. Sweet Potato and Lentil Soup from Food Network
  2. Black Bean Soup from Money Saving Mom
  3. Sweet Potato and Red Pepper Chili from Once a Month Meals
  4. African Coconut Chickpea Soup from Once a Month Meals
  5. Grandma’s Vegetarian Chili from Allrecipes
  6. Vegetable Stew from Real Simple
  7. Vegetarian Fajitas from The Pieper Life
  8. Chinese Hot Pot from PETA
  9. BBQ Tofu from
  10. Vegetable and Chickpea Curry from Cooking Light
  11. Enchilada Orzo from Damn Delicious

If the recipe doesn’t contain freezer directions, simply combine all of the ingredients in a gallon-sized plastic freezer bag, remove as much air as possible, and freeze for up to three months.  (I wait to add water/broth until the day of cooking.)

When you’re ready to eat, thaw the bag in your refrigerator overnight or in a bowl of cold water.  Cook according to the recipes instructions and add 1-2 hours if the meal isn’t totally thawed.  Enjoy!

      Here is the one that I recommend: Crock-Pot 6 Quart Programmable Cook and Carry. I think 6 quart is the perfect size if you only have one slow cooker, and having a timer is awesome because you don’t to have to be home to switch it to warm or turn it off. The clips are just a bonus if you make something for a holiday or potluck and need to take your crockpot in the car with you and don’t want it to spill.

    I discovered your website through Pinterest yesterday. I was hunting for a couple of crock pot recipes to throwl in the freezer. I love that you do a shopping list. It made it’s so easy just to print out the list and head out the door to the grocery store. Do your cookbooks include shopping list or meal groups as well?

    I have both cookbooks and they are great! I have the vegetable barley soup in my slow cooker right now and it smells great! However I’m noticing that it looks pretty thick. Is this how it should be? Or should I add more broth?

      Digital eBooks. All of my cookbooks are pdf files that can be read on a computer, tablet, or smartphone. They can also be printed on 8.5×11″ paper.

    Hi Kelly, I found your page on Pinterest and can’t wait to try some of your recipes this weekend. We’ve only had our slow cooker for a few weeks but every meal we’ve made so far has been great, it’s so helpful since I often work long days – this is my question; have you ever had your slow cooker on for around 12-13 hours? I know it’s probably not the best idea but my partner and I both leave the house around 6.15am and I don’t get home until around 7.30pm. Our slow cooker turns to “keep warm” once it’s the timer has finished and it has the option to cook for at least 10.5 hours, possibly more. I just wondered if anyone has had to leave their cooker on this long and how the meal had turned out? Thanks in advance for any suggestions.

      I’ve never tried it for that long, but I think it will be OK as long as it switches to warm after cooking. Soups and roasts would probably be especially good. I would be a little more nervous with chicken breasts.

    Hi,
    For the vegetable chickpea curry, if i want to freeze it ahead of time – do i need to cook the first few ingredients, then put them in the freezer bag with the remaining ingredients? Or can i just put everything in the bag raw? Thank you.

    I am allergic to tomatoes & I make a NOMATO SAUCE using beets, carrots, onions & butternut squash in place of spaghetti sauce. Could I possibly use some of it in place of the diced tomatoes in the SWEET POTATO and RED PEPPER recipe? Or should I use diced fresh beets? Maybe diced butternut squash?

    I’ve used your other recipes and enjoyed them. This will be my first attempt at a vegetarian crockpot meal. The BBQ tofu recipe talks about squeezing out the water from the tofu. Would it be better to not put tofu in the freezer bag the way cream cheese isn’t added for other meals? Thanks!

    We’ve made some of your other recipes and they turned out well and want to try some vegitarian fare. I bought the ingredients for the Vegitarian Stew recipe from Real Simple but it calls to add the chickpeas and zucchini in the last hour. How did you handle that as a freeze ahead meal?
