In 1984, President Ronald Reagan declared March 6th as National Frozen Food Day.  President Reagan called upon the “American people to observe such day with appropriate ceremonies and activities.”

Never celebrated this momentus occasion before?  Me neither!

I’m a sucker for celebrating holidays though.

I started freezing meals when my daughter Cameran was a baby and I wanted to save time and stress around the holidays.

Before my second daughter Isla was born, I prepped and froze two week’s worth of dinners. It was amazing to have homemade meals on-hand while I was recovering and bonding with the newest member of my family.

Since then, I’ve mastered an easier method of freezing meals: Simply chop your meats and vegetables, add the sauces and spices, and freeze. Since you’re not doing any cooking ahead of time, each recipe can be prepped in 15 minutes or less!  (Hence the title of my cookbook, ‘15-Minute Freezer Recipes.’)

All of my recipes cook in your oven or slow cooker when you’re hungry.  Since they’re cooking for the first time, they don’t taste like typical “frozen foods” or “leftovers.”

My daughter Isla is 19 months old now and I still make freezer meals for busy nights when I don’t have the time or energy to cook. There simply isn’t anything faster than dumping a freezer meal into your slow cooker in the morning.  Plus I love coming home at the end of a busy day to a house that smells like a homemade meal has been simmering in my slow cooker all day.

    I already plan my meals for 2 weeks to a month at a time, but what I lack is the ability to pre prepare meals for those days that are hectic, and most of my meals are fairly involved (I love to cook!) another issue I have run into is that my kids hate all of our favorite recipes 🙁

    I love the idea of freezer meals. I'm a huge planner as it is, and I always stick to my grocery list. Freezer meals would help simplify my process.

    My mom was a meal planner, so it only made sense that I would continue with what I knew — weekly meal planning and shopping — once I was on my own. I have been married for a little over 10 years, and every Monday, I sit down and plan the meals for the week. Including 2 crockpot or easy meals for the evenings I work out while my husband watches our baby. Our weekly meal plan goes on a huge chalkboard in my kitchen. I have had the chalkboard for about 4 years and it keeps me on track. I am more likely to cook at home if I make out my meal plan and post it where the whole family can see. I am always trying new recipes, so your cookbook would be a great addition to my search for easy meals!

    Thanks, Kim! Sometimes I make a big batch of the Mac n cheese (a full pound of macaroni – 4x what is in the recipe), let it cool, and freeze it. It tastes delicious baked after being frozen!

    I love my crockpot, but don't use it nearly as much as I would like to. My husband typically doesn't get home in time to eat with the kids and I so I would LOVE to have a resource to use to make better meals and have some left over for him. I'll admit that I rarely cook myself a meal during the week–most of the time its a sandwich or salad.
