3 Crockpot Freezer Meals to Pack For Vacation

Why make these crockpot freezer meals for vacation?

  1. You’ll save money eating out.
  2. You won’t have to spend your vacation cooking.
  3. You’ll eat healthier and feel better too.  Yay!

My husband and I came up with a list of our three favorite crockpot recipes to eat in the summer and I’m super excited about them.  They’re fresh and delicious and taste the same cooked fresh or frozen and cooked later.

Each meal has six servings, but if you want to feed more people it’s easy to add an extra pound of two of meat.  Serve with a salad or watermelon and dinner is done.

Crockpot Cool Ranch Shredded Chicken Tacos

Crockpot Cool Ranch Tacos

  • 2 pounds boneless skinless chicken breasts
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 taco seasoning packet (If you want to use homemade seasonings instead, click the link above to the original post.)
  • 1 dry ranch seasoning packet

Combine all ingredients in a bag and freeze. Cook on low for 8 hours in a 4-quart crockpot or 4 hours in a 6-quart crockpot. Shred chicken and serve on tortillas with cheese, salsa, and guacamole.

Crockpot Pulled Pork from my Crock’d Slow Cooker Freezer Meals Cookbook

  • 3-pound boneless pork shoulder roast, fat trimmed
  • 1 yellow onion, peeled and cut in half
  • 1/4 cup apple cider vinegar
  • 2 tablespoons honey
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4  teaspoon pepper

Combine all ingredients in a bag and freeze. Cook on low for 8 hours in a 4-quart crockpot or 4 hours in a 6-quart crockpot.  Shred meat and serve on hamburger buns with a side of coleslaw or salad.

Slow Cooker Asian Chicken Lettuce Wraps

  • 2 pounds of ground chicken
  • 1 medium-sized red bell pepper, diced
  • 2 large carrots, grated (1 cup)
  • 4 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup ketchup
  • 1 tablespoon honey
  • 1/4 teaspoon crushed red pepper flakes

Combine all ingredients in a bag and freeze. Cook on low for 8 hours in a 4-quart crockpot or 4 hours in a 6-quart crockpot.  Break apart meat and serve on iceberg or Bibb lettuce with a side of rice.

Grocery List for All Three Crockpot Freezer Meals

Produce

  • 1 medium-sized red bell pepper
  • 2 large carrots
  • 4 cloves garlic
  • 1 yellow onion

Meat

  • 2 pounds boneless skinless chicken breasts
  • 3-pound boneless pork shoulder roast
  • 2 pounds ground chicken

Seasonings

  • 1 taco seasoning packet
  • 1 dry ranch seasoning packet
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4  teaspoon pepper
  • 1/4 teaspoon crushed red pepper flakes

Everything Else

  • 1/4 cup apple cider vinegar
  • 2 tablespoons honey
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup ketchup
  • 1 tablespoon honey
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 3 gallon-sized plastic freezer bags
  • Side dishes (buy now or wait to buy at the beach) – tortillas, cheddar cheese, salsa, guacamole, hamburger buns, coleslaw (or salad), iceberg or Bibb lettuce, rice

The meals will last in the freezer for at least three months, so make them now and then pack them in a cooler with some ice packs.  Don’t forget to pack your crockpot too!

Hi!

You usually specify to thaw overnight between freezing and cooking. Am I being dense and missing that we should assume we thaw all freezer meals, or do we actually not have to thaw these?

Min, the FDA recommends that meals be thawed completely before cooking. However, I personally have thrown meals into my slow cooker straight from the freezer (gasp!)
