6 Healthy Freezer Crock Pot Meals in 45 Minutes

Confession: I totally failed at meal planning last week.  I scrambled for dinner every night, made multiple trips to the grocery store, and even gave up on Thursday and ordered pizza.

By Friday I had enough and decided to prep six healthy freezer crock pot meals for the coming week.  Here’s what I made, including my recipes and grocery list!

Here are the six healthy freezer crock pot meals that I made:

  1. Chicken Fajitas
  2. Cranberry Chicken (inspired by a recipe from my ALDI freezer meals)
  3. Ginger-Peach Chicken with Green Beans
  4. Sweet & Spicy Pork Chops with Butternut Squash (inspired by a recipe from my Whole Foods freezer meals)
  5. Meatball Vegetable Soup
  6. Chipotle Pot Roast with Carrots

Since I’m nine months pregnant, I decided to focus on healthy recipes that would be very easy to make.  I got inspired by this list of simple crock pot freezer meals and picked six recipes with six ingredients or less!  These are all recipes that we’ve tried before and know taste good.

Here’s how I made these meals quickly:

  • I used frozen diced onions instead of fresh ones.
  • I bought pre-peeled and diced butternut squash.
  • I used fresh carrots that I had previously peeled and frozen.
  • I bought seasoning packets instead of making my own mixes.

With these shortcuts, I was able to make all six meals in less than 30 minutes.  I’m rounding up to 45 minutes in the title of this post because I’m sure some people won’t want to make their meals this way.  If you’re brand-new to freezer crock pot meals I would give yourself 60-90 minutes and take your time.

Now we’re set with meals for this week. Yay!  If my baby decides to arrive before we eat all of them I’ll add the to my freezer stash.  More info coming soon with how I stocked it with 40+ homemade freezer meals.

Relax and enjoy him or take a nap and enjoy your stockpiled freezer. The rest of us should have a stash or can get by on repeats for awhile!!!!!!!!!!! LOL

    Thank you for all you do for us! If I wanted to cook a freeezer meal using one of the new electric pressure cookers could I put it in frozen? Do you know which setting to use or how much time to cook if I don’t use a programmed setting?. The instruction booklet is not very helpful.

    Your freezer meals are a God-send for this 74-year-old!

      I’m not sure, Julie, but I bought my cousin Jill a pressure cooker to find out. She’s going to test out some freezer crockpot meals in it and report back in the new year.

    Did you test out your food saver? Hubby got me one and it is harder to use than I thought. Congrats on the newest addition to your family, he is adorable… and you can just tell he smells like baby!! LOL

    Hi- I love, love, love all your recipes and grocery lists! Do your book that you buy happen to have the container counts for the 21 day fix on them? Your recipes all seem to be able to be in the plan and there are not many online recipes with shopping lists that include the container counts, just thought I’d check to see if that was part of the ones you buy or no.

    Any tips as far as the freezing meals process for someone new to it so I don’t mess up & end up with freezer burn of meals lol. Like recommended best bags & or containers etc.

    I read in one of the questions above that your recipes serve 4-6. What size crockpot should I use? I don’t want to be away and have the meal burn or dry out because the crockpot is the wrong size.

      They should work in 4-7 quarts. I use my 6-qt most often because it has a timer, but a 4-qt would be a great choice if you don’t have a timer and need to be out of the house for a long time.

    Thank you for this! All the meals look great and the shopping list is so nice making it easy to prep these meals! Question though – I have had the hardest time finding fresh cranberries. Any suggestions on where I could find them post holiday season OR a replacement option for them? Thanks!

      You could substitute frozen cranberries. I also think frozen cherries would be delicious, but you would need less sugar because they’re naturally sweet.
