Five Vegetarian Freezer Crockpot Meals in 50 Minutes

After sharing my 17 favorite freezer meal prep sessions, a bunch of people asked me to prep some vegetarian freezer meals.  I was a little bit nervous because my family eats meat, but I was able to come up with five vegetarian freezer crockpot meals that I knew we would love.  Here’s what I made, including my printable recipes and grocery list.

I was intimidated by the idea of dedicating a whole freezer meal prep session to vegetarian meals until I talked to one of my friends about it.  She’s a vegetarian herself and she told me to forget about finding brand-new recipes on the web and focus on finding substitutes for meat in my favorite recipes instead.  Eureka!

Since I’ve tried some version of these recipes before, I can tell you that they’re all absolutely delicious!

If you’re a vegetarian, then I think you’ll love the convenience of having these crockpot meals ready-to-go in the freezer.

If you eat meat, you’re welcome to add ground beef or chicken breasts to the freezer bags.  We’ll probably just save ourselves the money and space out our vegetarian meals over the next few weeks.  (Most freezer meals will stay fresh for at least three months, but freezer meals don’t last long at our house.)

While I initially struggled to come up with recipes for this freezer prep session, I have to tell you that it ended up being one of my favorites.  Here’s why:

  • I didn’t have to buy any meat so the meals were very affordable. (I only spent $30 total at the grocery store.)
  • I won’t have to remember to thaw the meals before cooking them because veggies can go straight into the crockpot frozen. (Meat should be thawed first.)
  • The meals all include vegetables and are very healthy.
  • The colors of the vegetables were so pretty and fun to photograph.

Overall, it took me about 50 minutes to prep all five meals, including clean-up.  Preparing five dinners under an hour sounds great to me!  Now all I have to do is dump the frozen meal into my crockpot in the morning and serve a simple side dish at dinnertime, like crusty bread or baked crescent rolls.

If you’re new to freezer crockpot freezer meals, the recipes above will walk you through the process step-by-step.  All you need to do is combine the ingredients in gallon-sized plastic bags and freeze.  My freezer cookbooks also include a ton of tips and recipes.

    The Greens & Beans recipe calls for the greens to be added after the beans have cooked for 6-8 hours, so why would they be frozen together in the same bag?

    In the Mexican Chili there are 2 cans of black beans – are they supposed to be drained and rinsed like the beans in the other recipes?

      Yes! I ended up using dry black beans that I cooked in my crockpot, but if you use canned then I would drain and rinse them.

    How many servings are there in each meal. I have four kids. Should I double the recipe?

      They vary from 4-6. The printable pdf lists each recipes individually with its number of servings. You might want to double the ones that only have 4.

    I made all these recipes tonight and I’m looking forward to trying them! I’m a single mom with two young kids, so I used quart bags instead of gallons and divided up the meals into 2-4 bags each (depending on the recipe). I ended up with 15 meals! I don’t plan to use the crock pot since I think with my smaller portions they’d end up overcooked, but I think tossing everything in a pot and letting it simmer shouldn’t be too difficult!

    I do want to point out that the Jiffy cornbread mix called for in the chili recipe is NOT vegetarian. It’s made with animal shortening, also known as lard. http://www.jiffymix.com/product.php/12/Corn_Muffin_Mix. I plan to make my own cornbread to go with the chili using butter.

        Jiffy does make vegetarian cornbread mix also. It doesn’t contain any lard.

          I was reading through the comments before I posted about Jiffy cornbread mix. I have never seen Jiffy’s vegetarian version, but there are other brands…I use Martha White corn muffin mix.

      Good to know about Jiffy! I don’t know if I would’ve thought to read the label. And good idea to divide the portions into smaller bags. I’m single & 4-6 portions is a lot to make at once. I don’t want to go to the effort of freezing everything only to have it go bad once I’ve cooked it!

    Hello! I could have missed it, but I don’t think I saw the amount or kind of beans used for the Veggie version of the Beef Fajita. I know they’re black beans, but are they canned or dry, and what amount? It looks delicious! Thank you!

      One 15oz can (or the equivalent of cooked dry beans). If you click the recipes/grocery list pdf, you will find all of the recipes in detail. Hope that helps.

    Hello, Thanks for your recipes. I made 3 yesterday, but I am concerned about overcooking them in the crockpot especially if I used canned beans. Do you think a time of 3 hours would be sufficient if i have used canned beans. And, with all the recipes could we use dry beans and would that be the best alternative? Although, I imagine more liquid would be needed for the recipes. Can you assist? I am new to this type of cooking. Just trying to prepare before baby #2 arrives. Thanks!

      I think the veggies will still be crunchy after 3 hours, so I would do at least 4 and maybe even 6 hours. I’ve cooked canned beans in my crockpot for 8-10 hours without any problem. If you use dry beans, I would soak them first and I think you would need some extra liquid. I haven’t used dry beans in a lot of my meals so I’m not sure exactly how much.

    These are AMAZING!!! I am the only vegetarian in my house, i made all of the meals last week and everyone in my family, even meat eaters, loved them all. We are particularly in love weith coconut chickpea curry and the fajitas, but i plan on making all of these meals again. Do you have more vegetarian freezer meals for the crock pot? With our busy schedule these were a god send, ive tried other meals like these in the past and the majority my family hated. Thank you!!!

    These are amazing! I plan on doubling and prepping for my husbands back surgery. With 2 kids and a recovering husband these will be a godsend! Quick question: your recipie for beans and greens calls for half a head of kale, can you tell us how much this might be in cups? We grow our own and its not head forming.

      Hmmm, I’ve never measured. Maybe 4 handfuls? You could probably do more and still have the recipe turn out great. It’s very versatile and will only be more/less like soup.

    I tried the Hawaiian chicken and it was not edible. The chicken was mushy and pasty. I made it without freezing it first. Any thoughts what went wrong?

      I’ve heard that some people have an issue with that recipe and I think it’s because of the pineapple. Someone told me that it over-tenderizes the meat and breaks it down. I’m so sorry about that, Kim.

    Thank you for including vegetarian choices! Our whole family eats mostly vegan /vegetarian, so I am super excited to try these. There was a question earlier regarding dry vs canned beans. We use only dry and prep them in bulk and freeze them jn 1 1/2 cup servings which is = 15oz can. This could work great for these meals and you could either separately freeze the leftover beans or make bean dips/spreads for kids lunches. Much healthier and cheaper than the canned variety, IMHO.

    Hello dear. Thanks for the recipes.Do you think that I can make these meals in a pressure cooker instead of a crockpot? Pressure cooking generally makes things cook quickly so it’s used for dry beans ,beef etc.

    I am seriously amazed. I use to think most crock pot meals were gross but you have made me toss that belief out of the window. As a newly single mom trying to eat healthy while pinching pennies, I can’t thank you enough for the time it takes to do all of this.     Do I not need to defrost “greens and beans” and “black bean fajitas” in the fridge? It does not say to but I am concerned it will not fit in the slow cooker. I am just getting my bags ready now:)

      I think you should be able to break them apart, or you can always run the bag under water for a minute. If you want to thaw overnight, that’s fine too.

    Thank you for these! And I just saw the link for 11 more vegetarian meals. Woohoo! I’ve only made the chickpea curry and the tomato & barley soup so far. They are both quite good, but a little on the sweet side for my taste. Also the chickpea curry was spicy! I know I didn’t have crushed red pepper flakes, so I used ground red pepper I think. It probably isn’t too spicy when you use what the recipe calls for! Anyhow, good flavors with both of them & very easy to put together. I actually didn’t freeze the tomato & barley soup because I needed it for dinner that night. But the chickpea curry froze & cooked well. Nothing ended up mushy. Thanks again for sharing!

    I did a crock pot on “beans”, and the result was “hard” uncooked … brown beans!!!

    So, I wud think this is a HOAX!!

    I’m excited to try these recipes. I’m glad that they are all vegan, or can easily be made vegan.

    I am curious about the onion though. The previous crockpot freezer meals I tried turned out kinda gross (my husband couldn’t eat half of them!). From what I’ve read online, it sounds like this might be because of the raw onion, and maybe the garlic. Has anyone else had this experience? I’m going to try to avoid it this time by sauteing the onions in a big batch, and the garlic in another batch, before I add them to the bags.

      I have a similar issue with onions, Andria! I use my Instant Pot for pressure cooking or crockpot cooking – what I do is chop up a bunch of onions at once (for me, it’s just the onion) and freeze them in 1 cup increments. That way I dump the onions in first and use the sautée setting for a little while before dumping in the other ingredients from a separate freezer bag – but I probably find that easiest for me because of the built-in sautée setting.

    We LOVE the coconut chickpea curry! And we aren’t vegetarians. It’s akin to something you’d get in a restaurant. I’ve made it twice already and the second time I added fresh chopped carrots – both with and without the carrots were delicious! I plan to make this for vegetarian friends coming for lunch next week. Amazing!!

    I’m a single women leaning toward going vegetarian/vegan and I made these meals last month because I’m not a huge fan of cooking every night just for myself. These were really easy to put together…Thank you for the printable recipes and the shopping list (huge help!). As for taste, I wasn’t a huge fan of the tomato barley soup (probably just because I’m not so much into tomato based soups), but I loved loved LOVED the curry, the black bean chili, and the fajitas. I will definitely be putting those three together again and making multiple batches so I’m set for a few weeks. Thanks again!

    i made the coconut curry recipe and can’t give it enough good press! i have given away servings to coworkers and friends, who will all be making it now as well. my only modification was pre-cooking onions because i have never, ever had good luck with crockpot recipes with raw onions. thanks!

    I have been making these at home and and sharing with new-baby families for a few months and they are FANTASTIC. I wanted to share a few tips.
    1. I add veggie broth boullion or cubes to the bag so they are all “just add water”, especially perfect when giving away.
    2. For the beans and greens and the black bean dishes- I par-boil the beans, then freeze and the cook up PERFECTLY.
    3. The curry is great, but you end up with a lot of sauce. I add another serving of veggies or a pound of cubed tofu. It’s perfect and even more filling.
    Thanks for these- they’ve made my life so much easier!!

    I prepped/froze all of these meals about 5 weeks ago, and put them on my monthly menu plan. We had one of these meals every Wednesday. They were all wonderful!! My whole family loved every recipe on this list, which is a huge deal. I will be doing this every month. Thanks!!

    These recipes look wonderful! Can’t wait to try them! Jiffy corn mix (at least the last time I checked) is not vegetarian, as it contains lard. But there are lots of corn bread mixes that are, or you could make your own.

      Definitely. And they sell a Jiffy vegetarian boxed mix at my local grocery store.

        Just make sure the amount is comparable. I believe the Jiffy mix only yields 6 muffins. You don’t want the topping to be too thick to cook through.
